Carrot fries are one of the easiest sides you will ever make! In fact, usual boring potato  french fries can step aside as this becomes a new favorite in your home. Carrots are a non-starchy root vegetable that are PACKED full of beta-carotene, an antioxidant that can lower your risk of heart disease and cancer. Fun fact, once consumed beta-carotene converts to vitamin A in the body, promoting good eye health, a strong immune system and healthy skin! You can add any type of seasoning to this recipe. We love using Mrs. Dash® for a lot flavor without all the salt. For a sweet twist, try using cinnamon and nutmeg.

 

3 Ingredient Carrot Fries

INGREDIENTS

8 medium carrots

1 tbsp. olive oil

1 tsp. Mrs. Dash Onion and Herb®

 

DIRECTIONS

Preheat oven to 400°. Line a baking sheet with parchment paper. Wash carrots and leave the peel on for increased fiber and to help hold the shape of the fry. Cut into fairly even sticks. Place in a medium sized bowl. Add olive oil and Mrs. Dash seasoning. Stir until coated. Spread carrot fries evenly on the baking sheet, making sure that none of them overlap. Bake for 25-30 minutes, flipping about halfway through for even cooking. They will not be completely crispy but will start to brown on the edges when done.
