These baked empanadas are easy to cook up and are so delicious. Empanadas are typically fried and filled with fatty meat. Other pre-made beef empanadas on the market today have almost double the calories and sodium. Our version will still satisfy your craving and at just 136 calories per serving, are pretty guilt free.  You can’t go wrong! Try these for dinner or a new appetizer at your next gathering.

Baked Beef Empanadas with Egg

INGREDIENTS

12 Goya ‘Dough for Pastries’ (about 90 calories per round)

4 oz. lean ground beef, 93%/7%

3 large hard boiled eggs

1 egg, whisked for egg wash

¼ c. green bell pepper, diced

¼ c. yellow onion, diced

½ c. russet potato, diced, cooked

½ c. marinara tomato sauce

¼ tsp. garlic powder

¼ tsp. onion powder

¼ tsp. oregano, ground

Non-stick cooking spray

 

DIRECTIONS

  • In a saute pan, brown ground beef. Add spices, onion, green pepper, and cooked potatoes. Mix in tomato sauce.
  • Simmer mixture until vegetables are softened and all the ingredients are completely incorporated.
  • Cut hard boiled eggs into quarters.
  • Spoon mixture equally into the center of the dough rounds. Add a section of egg. Fold pastry and close with a fork.
  • Brush empanadas with egg wash. Bake at 350 for 10 minutes, flipping over halfway through.
