Let’s be honest, who doesn’t love some delicious Mexican food? But we all know it’s easy to get carried away with the chips, dips, large entrees and sugary sweet cinnamon desserts when you go out to a restaurant. Luckily, it’s super simple to make flavorful and satisfying Mexican food at home, and guess what, it can be healthy and low in calories too!
This recipe is a new favorite in my home and doesn’t take much effort or time to prepare, less than 15 minutes, so it’s great any night of the week. Ringing in at 300 calories each, they fit perfectly into any meal plan. Typically, tostadas have fried tortillas but you won’t miss any of the flavor or crunch with these baked whole wheat tortillas. Just writing about this recipe is making me hungry! Spread your favorite fat free refried beans onto your freshly baked tortillas to start. I like the original fat free refried beans, but there are a lot of fun varieties to try, for example with lime! Sprinkle chopped lettuce to add a refreshing crunchy bite.

Baked Beef Tostada with Tropical Mango Salsa

Next the beef strips. I love to buy a couple packages of these ‘stir fry’ beef strips when I’m at the grocery store. They are super quick and easy to prepare and go great on salads, sandwiches, mixed with sauteed veggies and of course tostadas! Since I paired this recipe with our Tropical Mango Salsa I omitted seasoning the strips. But, garlic powder, onion powder, chili powder and cumin are a delectable flavor combination if you desire something more. By the way, leftover seasoned beef strips go great with eggs and fruit at breakfast! YUM!

 

Top it all off with our Tropical Mango Salsa! This salsa is so tasty with freshly baked tortilla chips or piled onto a refreshing summer salad! Tossed in a citrus splash of lime juice, with flecks of red onion and cilantro throughout, this recipe is balanced perfectly with flavor. At only 47 calories per half cup (that’s a lot of salsa) it’s a guilt-free side or snack!

Baked Beef Tostada

INGREDIENTS

1 lb.  lean beef strips

1- 16 oz. can fat free refried beans

4- 6 inch whole wheat tortillas (80 calorie variety)

2 c romaine lettuce, chopped or shredded

2 c Tropical Mango Salsa

 

DIRECTIONS

1) Pop tortillas into a 400 degree oven for about 10 minutes, flipping once, until crispy.

2) Cook beef strips in saute pan (feel free to add additional seasonings if desired!)

3) Chop lettuce, open refried beans and gather Tropical Mango Salsa.

4) Top your crisp tortillas with beans, lettuce, beef and salsa. Enjoy!
