Feeling like Greek food tonight? This easy recipe will take your taste buds on a trip and definitely hit the spot. I love anything with feta, so this dish is an absolute favorite of mine!
I used ground turkey to keep the meatballs extra lean in this recipe. I also subbed spaghetti squash for pasta. Spaghetti squash is amazing and it’s so easy to prepare! Not only does spaghetti squash taste delicious, it is so low in calories that you get to have a big serving of it, completely guilt free. To be exact, spaghetti squash has 42 calories per 1 cup compared to 220 calories per 1 cup of pasta. In addition to being easy on your waistline, spaghetti squash is good source of niacin, pyridoxine and pantothenic acid, which are all B vitamins that help convert food into energy for your body. Alright, let’s start cooking! Get all of your meatball ingredients ready.
Start out by putting the garlic, oregano, basil, bread crumbs and egg in a medium bowl with the ground turkey.
Mix all the ingredients together. I prefer to use a spoon for this part but you could use your hands.
Roll the mixture into even sized balls, about 1 inch diameter each.
Place them on a prepared baking sheet.
Once you have 18 even sized meatballs, put these in the oven while you get the spaghetti squash ready. See our Winter Squash Trio How To post for the step by step directions!
After you have cooked your spaghetti squash in the microwave, heat up the olive oil in a shallow pot.
Using a fork, scoop out the squash. It seriously looks just like spaghetti!
My favorite addition is next! Pour in the lemon juice, toss in the feta and heat for just a few minutes.
These bad boys are ready to be added to the squash! Oh, the flavor!

Greek Spaghetti Squash with Turkey Meatballs

Makes 6 servings
1.3 lbs 93% lean ground turkey
1 tbsp minced garlic
1 tbsp oregano
1 tsp basil
¼ cup bread crumbs
Non stick spray
1 medium spaghetti squash
¼ cup lemon juice
¼ cup olive oil
1/2 cup feta cheese
- Preheat oven to 400°.
- In a large bowl, stir all meatball ingredients until well combined.
- Coat a baking sheet with nonstick spray.
- Roll the mixture into 18 even sized balls, about 1 inch diameter each, and place on the baking sheet.
- Bake for 20 minutes, flipping halfway through.
- Cook the spaghetti squash in the microwave. Follow our step-by-step directions here.
- Heat olive oil in a shallow pot.
- Once cooked, scoop out the inside of the squash using a fork into the pot. It should look like spaghetti as it comes out, leaving an empty shell when you are done.
- Add the lemon juice and feta to the squash, toss, and heat for 3-4 minutes.
- Serve with meatballs.
