Salmon and homemade honey mustard are a delicious combo. Paired with red potatoes, this dish is a real winner! Fish is a great source of protein and also provides omega-3 fatty acids. The American Heart Association recommends eating fish 1-2 times per week. I love to purchase frozen fish to ensure its freshness. Let’s get started with this easy and delicious meal!
For the sauce, mix together dijon mustard, lemon juice, garlic powder and honey.
Slice small red potatoes about ¼ of an inch thick. I love using red potatoes, they add color and the skin gets crisp in the oven!
Next, spoon and spread ⅓ of the sauce onto each piece of salmon.
Toss the potato slices in the remaining honey mustard sauce.
Place salmon on one side of the baking sheet and spread potatoes over the rest of the sheet, in a single layer.
Yum! Pair honey mustard salmon and potatoes with a delicious side salad or a non-starchy vegetable, like broccoli, zucchini or carrots.
Homemade Honey Mustard Salmon & Potatoes

2- 4 to 6 oz. salmon steaks
1 tbsp Dijon mustard
1 tbsp honey
1tbsp lemon juice
½ tsp garlic powder
Salt & pepper to taste (not considered in nutrition facts below)
- Mix mustard, honey, lemon juice and garlic powder together.
- Spoon ⅓ of mixture on each piece of salmon.
- Thinly slice potatoes and toss in final ⅓ of mixture.
- Spray cookie sheet with nonstick cooking spray. Place salmon pieces on one side and the sliced potatoes in one layer on the other side.
- Bake for 20 minutes
Side salad, zucchini, broccoli, carrots, greens.
