Key Lime Pie is one of my top three favorite desserts! It’s creamy with a sweet yet slightly tart flavor. Unfortunately, it also packs in a lot of calories, with one slice weighing in at over 400 calories, 60 grams of carbohydrates and almost 50 grams of sugar. That’s according to the popular Sarah Lee© Key Lime Creme Pie brand. In fact, the first ingredient listed on the packaging is sugar, which tells us that is the most ingredient used by weight. The newest Dietary Guidelines recommend limiting added sugar to no more than 10% of your total daily caloric intake. That’s means no more than 50 grams of added sugar on a 2,000 calorie diet.

In one of my cooking labs in college, we made a super delicious key lime avocado pie and I thought, why not recreate that with greek yogurt and make it a single portion dessert. You might be wondering, “Why add the avocado in?” The avocado provides monounsaturated and polyunsaturated fats, which are known to help prevent heart disease, as well as vitamins K, E, folate and fiber. That’s not the kind of healthy nutrition you usually get with dessert! The avocado also gives this dessert a rich smooth consistency when mixed with the yogurt. The toasted coconut on top just makes it taste a little tropical, which you can’t go wrong with.

It’s really easy to make this recipe! You first start out by crushing your graham crackers. I like to place them in a gallon bag and gently press a rolling pin over them.

Make sure you use key limes. Not only do these little gems give this dessert the perfect flavor, they also make a really cute garnish at the end!

Next, simply blend all of the ingredients together until they are smooth.

Toast the coconut on medium heat in a saute pan until it starts to brown and smell fragrant.

Now you get to put it all together! All you have to do is layer the graham cracker crumbs, yogurt filling and top with whipped cream. I like to make my own fresh whipped cream and pipe it on but you could use the store bought kind if you prefer.

Makes 4 servings

 

Ingredients:

 

4 graham crackers

1 avocado

1 six oz key lime pie greek yogurt, 0%

4 key limes, save one for garnish

1/2 cup whipping cream
1 tbsp sugar

1 tsp vanilla extract

1 tbsp Sweetened shredded coconut, toasted

 

Directions:

 

  1. Crush graham crackers in a gallon bag using a rolling pin. Set aside.
  2. Blend avocado, greek yogurt and juice of 3 limes in a small food processor.
  3. Using a mixer, beat heavy cream, sugar and vanilla extract until stiff peaks form. Tip: Put the bowl and beater into the fridge for 10 minutes to make it extra cold.
  4. In 4 small dessert glasses, spoon graham cracker crumbs into the bottom, add the yogurt mixture next and top with the whipped cream.
  5. Garnish with toasted coconut and key lime slices.
  6. Serve immediately or store in the refrigerator until ready to eat.
