Light Loaded Potato Soup (with hidden low carb veggies)

INGREDIENTS

2 tsp. canola oil

½ c. yellow onion, diced

2 c. gold yukon potato, diced (~ 16 ounces)

2 c. cauliflower, chopped

4 c. low sodium chicken broth

2 c. low fat milk

2 oz. Canadian bacon, diced (divided)

½ c. sharp cheddar cheese, shredded

2 tbsp. fresh chives, chopped

 

Garnish: (included in nutrition facts)

4 tbsp. plain Greek yogurt

4 tbsp. sharp cheddar cheese, shredded

4 tsp. fresh chives, chopped

 

DIRECTIONS

  1. Saute onion and bacon in oil until the onions are translucent, about 5 minutes.
  2. In the meantime, dice potato and chop cauliflower in uniformly sized pieces.
  3. Remove onion and bacon from pan and set aside. Add potato, cauliflower and broth to a saucepan, bring to a boil then simmer for 20 minutes covered.
  4. Add onion and bacon back into the saucepan with the milk, blend mixture halfway with an immersion blender. Stir in the larger portion of shredded cheese and chives.
  5. Top each serving with 1 tbsp. cheese, 1 tbsp. chives, 1 tbsp. yogurt. Enjoy!
