Happy Fall everyone! This season comes with cozy sweaters, colorful leaves, and so many tasty treats. While I love all things pumpkin flavor, I really love all the seasonal produce. Winter squash and dark leafy greens are so easy and versatile to use in tons of recipes, just to name a few. Below are some seasonal fruits and veggies that we love and have utilized in several recipes!

Nutrition Benefits of Fall Produce

Fruits

Apples are perfectly nutritious and delicious, there are so many varieties, from sweet to tart, for making pies or butter. Apples are high in fiber and contain Vitamin C. Try our Pumpkin Spice Apple “Donuts” for a sweet treat or our  Apple Cranberry French Toast Bake.

Raspberries are also loaded with Vitamin C and fiber and are perfect for topping yogurt or eating as is! To prevent mushy raspberries, remember to wait to wash them just right before you eat them. Enjoy them in our Blue Raspberry Monster Smoothie, our Peachberry Wine Slushy, or in our Chocolate Raspberry Energy Bites.

Veggies

The most popular veggies, pumpkin and sweet potatoes, are loaded with Vitamin A, which promotes eye health. Also in season are dark green veggies, like Brussels sprouts, cabbage, broccoli, peppers, and kale. These greens are also high in Vitamin C, like our fruits. All these veggies are great sources of fiber and are very versatile in recipes like casseroles, soups, or just sauteed.  Below are some of our favorite recipes featuring fall veggies. Also, check out our Trio of Winter Squash page for tips on how to prepare butternut squash, acorn squash, and spaghetti squash.
