This homemade vegan recipe cuts the sugar and extra calories found in traditional box mixes. Using black beans, instead of eggs, not only decreases the amount of fat but also adds fiber and protein, plus you can’t even taste the beans! These gooey, moist brownies don’t skip on the rich chocolate flavor or sweetness. We think you and your pickiest eaters are going to love these!

Vegan Black Bean Brownies

Vegan Black Bean Brownies

INGREDIENTS

½ c. sugar

½ c. flour

⅓ c. cocoa powder

½ tsp. salt

½ tsp. baking powder

1 can black beans, rinsed and drained

 

DIRECTIONS

  1. Preheat oven to 350 degrees. Coat 9 in. x 11 in. baking dish with non-stick cooking spray.
  2. Add black beans to food processor and puree until smooth. Add remaining ingredients and blend until combined.
  3. Pour brownie mix into coated pan and bake for 20-25 minutes. Brownies will be done when a knife comes clean when placed in the center.
  4. Let cool for at least 10 minutes before cutting.

 

SERVING SUGGESTIONS

Serving with a side of ice cream, top with sprinkles, or eat as is, either way they are great!
